Good Eating Monday: Jello Mosaic Bars

    Greetings my excellent friends! We saw the Amazing Spider Man 2 this past weekend. In general, it was good entertainment; not as good as Captain America. This Spider Man felt like an "in-between" movie, something like the second Back To The Future did. During the opening action sequence it seemed Spider Man was a lot more interested in fooling around, then actually stopping the criminal driving wildly through the city. Jamie Fox was fantastic as Electro and Andrew Garfield and Sally Field had a really good moment.
    But I'd forgotten a lot of stuff from the first Spider Man and found myself a little lost at first. I think the film could have really benefited from some kind of brief recap of the last movies highlights to bring the audience up to speed.

    Today's Good Eating recipe is: Jello Mosaic Bars!

    Good Eating Monday: Jello Mosaic Bars (1)This is easy no bake dessert that looks extremely fancy.

    I made it for Tuesday Bible Study at the Airman Center and all the Air Force kids thought it was fantastic!

    Plus this particular gelatin dessert isn't prone to dissolving while left out for serving as some do.

    The one caution from my experience is this: avoid using lime jello. I found lime over-powered the other jello flavors, so my mosaic tasted mostly lime. Choose any other 4 jello flavors.

    Also, the sugar-free gelatin performed better then the regular kind, so I'd use all sugar-free next time.

    Ingredients:

    4 3oz boxes of different color & flavor gelatin's, such as orange or peach, strawberry or cherry, lemon, blue or grape

    (avoid lime---too strong.)

    2 envelopes of unflavored Knox Gelatin

    1 can Sweetened Condensed Milk, like Eagle Brand.

    1/2 cup cold water

    5 1/2 cups boiling water

    Cooking Spray

    Directions
    Add 1 cup of boiling water to each fruit gelatin in separate bowl; stir 2 minutes until completely dissolved. Pour each gelatin into a small, shallow food storage container sprayed with cooking spray & refrigerate 2 hours or until firm.

    ( I did mine one at a time.)

    When the fruit gelatin's are solid: pour 1/2 cup cold water in a bowl and sprinkle the 2 envelopes of unflavored Knox gelatin over top; let stand 1 minute. Stir in remaining 1 and 1/2 cups of boiling water. Add condensed milk and mix well. Allow to cool slightly.

    Cut the flavored gelatin's into cubes and randomly place in a 12 x 9 inch pan sprayed with cooking spray. Pour cooled milk mixture over cubes, giving a gentle stir to evenly distribute cubes and refrigerate for 2 hours until firm before cutting into bars.

Yes, I tried another new Pinterest recipe and this one is a winner! The primary dictionary definition of a "Dump Cake," is an easily made cobbler in which cake mix is dumped over canned fruit or pie filling. This recipe was pinned from Del Monte, which means it's been a recipe that's been created & tested in a corporate test kitchen. That's one benefit of all those label, can & box recipes provided by manufacturers on their product packaging. You can even buy cookbooks featuring nothing, but package & label recipes of which many are vintage. The only changes I'd suggest is add one more 15 oz can of fruit. It can be more peaches, cherry fruit co*cktail, regular fruit co*cktail or whatever you want. (So, I've noted 4 cans of peaches in the recipe.) Mama Kat Thurs: That Fabulous Grinch Song!

The Mama Kat prompt choice I'm doing today is, "Write a blog post inspired by the word: Grinch." The "Grinch" is a character created by Dr. Seuss, a.k.a Theodor Geisel, famous for his numerous children's books. The Grinch first appeared in a 32 line poem called, "The Hoobub and The Grinch," originally published in Redbook in 1955. (ah, making Mr. Ginch a year older then me!) The book, "How the Grinch Stole Christmas," was published in December, 1957. Director Chuck Jones adapted the story into an animated special in 1966 narrated by Boris Karlof. The song, "You're a Mean One, Mr. Grinch," was wonderfully sung by voice actor, Thurl Ravenscroft, also well known for voicing Tony the Tiger for Kelloggs ads. Mama Kat Thursday: The Big Win

The Mama Kat writing prompt today is, "You won an award sometime in your life...what was it for?" After the military I went to a two-year college to study Commercial Art. During the course of that study, our instructor presented us with an class project for the Indiana State Fair. They wanted to decorate their Pioneer Building on the State Fair Grounds in Indianapolis with 6 symbolic logos representing topics like Agriculture, Industry, Hoosier Travel and so on. It was a class contest and the State Fair committee would select the winning design. Indiana State Fair Grounds Now the Indiana State Fair is a massive affair. It's huge. It has two sides with a horse track in the middle. Mama Kat Thursday: Don't Spook the Cat

The Mama Kat writing prompt today is on the topic of, "Write about the last thing that spooked...your pet." This is our cat, Sunni. She's exclusively an indoor cat.(Because fleas will bite Hubby and we can't have that) Sunni is very companionable and has us well trained. She sits at the table with us for dinner, then runs to the bedroom and "calls" for one of us to come make a "cave" for her in a blanket, so she can get in it and be covered up. Her one penchant is she doesn't like other cats. She doesn't even like seeing one walking around in her range of sight outside. Several neighbors have outdoor/indoor cats and they walk through my yard; sometimes even approaching the sliding glass door to peer within. Good Eating Monday: Pineapple Sheet Cake!

Greetings! Another new week in March! My Hyacinths outside are blooming and I snipped a pink one to bring inside jsut for the smell because they are soooo exquisitely fragrant! I'll probably feature photos of them on Wednesday! Today's Good Eating recipe is Pinterest cake recipe I'm trying out this week: Pineapple Sheet Cake! Though, I actually won't be making until tomorrow to take to Bible Study on base tomorrow night, so I'll have to report back later on how it came out! All those Air Force guys & gals make excellent test subjects! Though it's a sheet cake, I'll be making it in a 9 x 13 pan like the blogger who posted it, so it will be thicker, as in the photo. She did recommend doing it as a thinner sheet cake if you want to take it to a crowd event, like a picnic. The recipe calls for 1 can of crushed pineapple with the juice plus 2 cups of sugar in the cake---with pineapple being so sweet itself, I'll definitely be knock
