He did a few things wrong imk…
1- Why use olive oil when you have bacon? Start with the bacon and use it's fat…
2- I would start with the meat and reserve it, then continue with a very fine mirepoix (French sofrito) to build a deeper fond. (I still add bigger carrots afterwards)
3- Deglaze with the red wine, then add the brandy and flambée
4- Tomato paste?? No need
5- Pearl Onions and Mushrooms should be sautééed before added to caramelize, some chefs even glaze them (but it's an extra step I don't care for)… Also mushrooms should be without the buttons. I usually chop them extra fine and add them to my mirepoix to enhance the umami of the sauce
6- Potatoes aren't usually mashed, altho it can be nice… Traditional recipe just call to add them closer to the end, personally I like them sautéed first so they're a bit fried and don't fall appart in the stew (in the pan with the onions and mushrooms)(Pro tip for the mirepoix : Chop a lot of veg and freeze it in individual portions so you don't need to prep it when it's time to cook, it's to build a fond anyways, not to cook into a nice texture so it can be frozen. I often build mine 25% equal parts carrots, celery, onions and leeks (but you can replace the leeks for a second part onions, just my preference).

I made that on the fire with some game meat, a couple of weeks ago. I used one of those cast iron pots and just put hot coals on the lid, and around the sides. Best day of my Life (food wise). The game meat was Eland, so Thats basically beef, that just stands a bit taller with way less fat.
